Add API to enable/disable plot generation

An option to enable/disable plots could be useful for users who don't actually need the plots that are being generated and want to build their custom plots using the .dat or .json files that are dumped as output.

Goal is to avoid the unnecessary processing happening for plotting and optimize the run.
