fix: default branch management

BREAKING CHANGE: rules keyword is used instead of only and except for
deploy jobs. Update your overrides accordingly.

BREAKING CHANGE: the NEXY_BOT_EMAIL needs to be set to an existing and
authorized GitLab account. Nexylan projects are not affected.
