Use a stable poetry-core in cookiecutter templates and recommend it in the docs

to use the earliest stable version of the PEP 517 build system with PEP 660 support (poetry-core>=1.0.8

Update this section of the docs to clarify that editable installations are supported The biggest change is that -e (“editable mode”) doesn’t work how it used to with pip. Instead, just use the shell-script approach from the cookiecutter template. This script automatically changes into the poetry directory and executes the needed poetry run commands from that folder. (There’s a stackoverflow link in the shell script with more context.)
