Exploratory Sprint: Figure out E2E CSV experience

tap-csv doesn't work beyond uploading a file

We should come up with a clear workflow so that the user can go all the way through to Analyze

• @dmor clarify the steps the user needs to go through
• figure out a way to remove something from the UI without removing it from Meltano and remove tap-csv from the UI: #1390 (closed)
