Relates to #308 (closed) MacOS has changed security enforcement and users can no longer symlink into /usr/opt. This change adds Darwin to the os prober checks so that pdfinfo, pdftoppm, libreoffice, exiftool and tesseract are found successfully when those tools are installed with homebrew.

Accompanying documentation for MacOS will follow soon.
