Significant performance degradation following upload - new install

I'm seeing major performance degradation immediately following upload of files via the "New Document" wizard. I am working with a fresh install, using the official Docker Compose and env files from the docs. The only changes made are forwarding the RabbitMq UI port, and the following in the env file:
MAYAN_DATABASE_NAME=mayan
MAYAN_DATABASE_PASSWORD=mayan
MAYAN_DATABASE_USER=mayan
MAYAN_ELASTICSEARCH_PASSWORD=mayan
MAYAN_RABBITMQ_USER=mayan
MAYAN_RABBITMQ_PASSWORD=mayan
MAYAN_RABBITMQ_VHOST=mayan
MAYAN_REDIS_PASSWORD=mayan
I'm running on a laptop with Intel core i5-1235U (10-core/12-thread), 16GB RAM, SSD storage, Docker Desktop 4.27.2.
The immediately following upload, Mayan becomes unresponsive and does not recover. Docker itself is impacted at this point, and is unable to communicate with the containers. I received the following error when attempting to stop the containers.
Cannot stop Docker Compose application. Reason: compose [stop] exit status 1. request returned Internal Server Error for API route and version http://%2F%2F.%2Fpipe%2Fdocker_engine/v1.24/containers/json?all=1&filters=%7B%22label%22%3A%7B%22com.docker.compose.config-hash%22%3Atrue%2C%22com.docker.compose.oneoff%3DFalse%22%3Atrue%2C%22com.docker.compose.project%3Dmayan%22%3Atrue%7D%7D, check if the server supports the requested API version
Other than Mayan, I have one other container running Stirling PDF. Due to the impact Mayan has to Docker itself, this becomes unresponsive as well.
I've attached the logs rather than paste them here. The exceptions encountered during the upload of just a few documents total around 10k lines of the 13k lines in the file - and continues to grow.
