Doc-ja: Fix Japanese snippets

• use Japanese texinfo loader texinfo-ja.tex instead of texinfo.tex
• Fix typo in 'Flamenco Notation' snippet that caused compilation to fail

(The typo is only in the translation, Documentation/snippets/flamenco-notation.ly is fine)
