This commit attempts to consolidate Rocky Linux profiles to reduce the
work needed to update or plan for new versions. This also allows us to
make future enhancements and improvements to a single profile going
forward, such as adding cloud images, live images, and so on.

* Consolidate test data into rockyX directories for iso and treeinfo
* Consolidate rocky 8 and rocky 9 into rocky-X.xml.in respectively
  * EOL 8-unknown, 8.4, 8.5, 8.6, 9-unknown, and 9.0 profiles
  * Set profiles to derive from rocky-X.xml.in profiles
  * Set rocky-X.xml.in profiles to have regex to catch all previous,
    current, and future versions for media and treeinfo
* Add additional architectures for Rocky Linux 9 (ppc64le, s390x)
* Add test data for aforementioned architectures
