How to properly update the images? When using the non-default ones. (variants of ku)

Since 1 month I've been doing docker-compose -f docker-compose.yml pull but was always using ku-md10

And now I tried docker-compose -f docker-compose.yml -f docker-compose.mariadb_d10.yml pull (the order is important between the .yml files ><) And the db image was updated.

Should one also do export KOHA_IMAGE=master-buster ; docker-compose -f docker-compose.yml -f docker-compose.mariadb_d10.yml pull to update the Debian 10 image?

I guess also the same problem will arise when I'll be using ES7.

So to sum up. If one wants to run a cutting edge env (D10 + MariaDB 10.3 + ES 7) should one use a big onliner for updates?
