Configurable logging and structured logs (JSON?)

I have recently been working on improving monitoring and observability of my Artanis projects. Something that I feel is sorely missing, is structured logging, potentially also JSON logging support, with annotations.

I think adding this would be a fantastic improvement to the framework, and would help make Artanis apps more modern and more production-ready in some stacks. It's great to for example run Grafana + Alloy + Loki and plug the logs to it, and be able to query them.

How would you envision this ? Where could I start contributing to get this moving?
