The elasticsearch logs clusters are one major version behind current, and we have at least [one issue](https://gitlab.com/gitlab-com/gl-infra/reliability/-/issues/18066) which cannot be resolved directly with the current version and infrastructure without mandating changes to index mappings. As we will need to maintain a regular upgrade cadence regardless, we will initiate and pursue that process, first. High-level approach 1.
