Fix test data on staging

Context

As part of working on Updating latest k6 version (!656) we realized that the projects on staging that GPT runs against have gotten deleted. We need to recreate them so we can run tests against staging. This problem causes the test:gpt job to fail: https://gitlab.com/gitlab-org/quality/performance/-/jobs/11777569230#L276
