Remove Elasticsearch Shards & Replicas config

What does this MR do?

MR removes the configuration of Elasticsearch Shards and Replicas, which in hindsight was too high. Instead the defaults will now be used.

This way customers can tweak after to their own data shape requirements.

  • Create any follow-up issue(s) to support the new feature across other supported cloud providers or advanced configurations. Create 1 issue for each provider/configuration. Contact the Quality Enablement team if unsure.
