Update Fullstack Engineering onboarding template to include docker and move readings

As part of #560 (closed). Update growth onboarding template to include docker desktop changes and move readings lower down.

Moving the readings lower allows for better allocation of time management while going through the issue. Readings can be referenced during the setup steps and read through after to have better context overall.
