Update document with accurate Elasticsearch versions(6.x, 7.x) support
Problem to solve
As we have added support for Elasticsearch 7.x and dropped support for 5.x, we need to update our document at doc/development/elasticsearch.md .

Proposal
- Update the document(s) with information about Elasticsearch 7.x support.
- Update the document(s) to delete 5.x support.
- May need to update the gitlab-elasticsearch-indexer version if that's also documented.
Who can address the issue
