What does this MR do?

Adds documentation for unleash logs that will be added by !28980 (closed).

Note that this is a follow-up MR and should not be merged until we know what milestone to substitute in for MILESTONE_GOES_HERE and only after the gitlab unleash client is actually released. For more details see: #211687
