Verify if Group SAML will need email/firstName/lastName/fullName

Background

At the moment email is marked required and the others optional. I think these are only used from build_user for the new user flow and so are not used in Group SAML. Additionally email is used for the auto_link_saml_user? option we don't support in Group SAML, so may also not be required.

• Verify the above and remove https://gitlab.com/gitlab-org/gitlab-ee/blob/master/doc/user/group/saml_sso/index.md#assertions section or make clear that all are optional
• Possibly re-introduce it once there is a new-user flow with Group SAML SSO (https://gitlab.com/gitlab-org/gitlab-ee/issues/5292)
