Update SelfHostedModel claude_3 enum to claude now that it supports Claude 4 as well

Description

At the inception of self-hosted models, we only supported Claude 3 model families. In the UI we called this model option Claude 3. However, support for Claude Sonnet 4 was added in %18.4 which led to us updating our UI to say just Claude.

Under the hood the enum is still called claude_3 though. We should clean this up to avoid confusion.
