Add classification:duo to our event tracking metrics and also add to Gitlab::Tracking::AiTracking

We need to update our ee/config/events YAML files (ones that have ai_catalog_ in their name) to include classification: duo.

We also need to add all of our metric events to Gitlab::Tracking::AiTracking see https://docs.gitlab.com/development/ai_features/usage_tracking
