Audit all copy added to AI Catalog

We've added a lot of strings while working on the MVP for the AI Catalog, many of them without much review by Technical Writing. We now need an audit to improve the user experience around the copy.

We've used the AICatalog| namespace for most strings and no namespace for generic strings like Edit. Some are defined in the backend as validations, but most are directly rendered in the frontend.
