Document behaviour of Duo chat sub-features in Self Hosted Duo

For action item in #525266 (comment 2404335278)

• Chat sub-features, when a model is not assigned, will fallback to the model of Duo Chat till the end of time.
• We should document the above behaviour clearly in our docs so that it is clear to our customer.

This behaviour is currently not documented, and it should be.
