Run tests against Elasticsearch, OpenSearch and postgres

Ensure that we have tests running against Elasticsearch, OpenSearch and postgres.

At a minimum we should have end-to-end tests for core functionality, whether that's part of the nightly QA tests or a different pipeline. The team should immediately get notified if these tests fail.
