Setting up and maintaining Elasticsearch clusters for larger data is a challenge

Background

I got a feedback one of the Co-Create visits, that the customers have to deep dive on Opensearch and Elasticsearch Clusters, and it gets difficult to manage and maintain those clusters, In this case the customer was in the middle of migration so the task gitlab:elastic:estimate_shard_sizes also did not help much.
