Upgrade swagger-ui-dist dependency to the latest

Summary

We're currently running an outdated version of swagger-ui-dist (and also swagger-client ), we need to update it to the latest version.

Issues

A lot of rendering issues have been fixed since the version we are using (5.14.0)

I currently face an issue where response examples are not correctly rendered, and I would benefit from this upgrade.
