Identify settings in Rails console

Certain settings are available to self-managed customers via the Rails console. We may need to expose these in the Admin UI to enable Dedicated customers to make adjustments. As a first step, let's identify the specific settings and document them here. The outcome of this issue is a list (either below or a comment) summarizing the settings which fall under the Pipeline Security domain that we may consider exposing via UI.
