Investigate Knative Helm chart

Purpose

In order to migrate away from relying on TriggerMesh, we need to fully own and manage our Helm chart.

Definition of Done

• Research and document current TM Helm chart
• Determine whether a refactor or rewrite of said Helm chart would be useful
• Draft a preliminary plan based on findings
• Create a GitLab managed fork of the TM Helm chart to work off of
• Present findings at team meeting
