Document existing solutions for external analytics

We should document the methods by which existing users can get data out of GitLab to drive external analytics solutions. Some contenders that we should reference:

1. Database backup/restores, potentially via the the pseudonymizer (not available on GitLab.com)
2. Audit Log API
3. JSON system logs (not available on GitLab.com)
