Increase logging in artifact deletion and relevant counter increments

Blocks #368326 (closed).

Before we can continue our investigation for #368326 (closed), we need more visibility on when artifacts are deleted, which classes are called, and how often redis counters are incremented/decremented.

In this issue, we want to add log calls that would help us trace what happens when an artifact is deleted up to when we update the project stats.
