Upgraded Cert-Manager after letsencrype warning - Failing to issue certs (setup Gitlab kubernetes integration)

We were using the cert-manager 0.6.2 everything was working fine. We got letsencrypt email to upgrade the version we followed the advice on this Issue#28033. Which was simply to click uninstall and reinstall - Which we did now we are having the errors issuing new certs :( @proglottis asked us to create this as a separate issue. Any help would be highly appreciated.

Cert-manager logs say image

full text: pkg/client/informers/externalversions/factory.go:117: Failed to watch \*v1alpha1.Certificate: Get https://10.8.0.1:443/apis/certmanager.k8s.io/v1alpha1/certificates?resourceVersion=43349787&timeout=6m4s&timeoutSeconds=364&watch=true: dial tcp 10.8.0.1:443: connect: connection refused

Just so you know we didnt have this error before uninstalling/reinstalling the cert-manager.

Setup: GKE 1.12.10-gke.15

What other logs would you like to see to understand the full picture?
