Rebase could use sparse checkout to improve performance

We rewrote the rebase feature in https://gitlab.com/gitlab-org/gitlab-ee/merge_requests/2962 so now it uses worktree. The next step is to use sparse checkout, see https://gitlab.com/gitlab-org/gitlab-ee/merge_requests/2962#note_41307005
