Show Gitaly calls and backtraces in profiler

The console profiler (https://docs.gitlab.com/ee/development/profiling.html#profiling-a-url) has a logger keyword argument. When set, it sets that as the logger for ActiveRecord, ActionController, and ActiveSupport. In practice, this means that it will output SQL queries (and their backtraces) for the request.

It should do the same with Gitaly calls - maybe with the same argument, maybe with a new argument.

#21469 would make this easier.
