Remove `GenericTracing` module from GraphQL schema

Description

In !73820 (merged), we took a big step towards replacing the GenericTracing with something that'll give us more helpful SLI metrics. Once we have some level of field metrics pushed to prometheus, we should be able to remove the old GenericTracing module.
