GraphQL query-to-urgency correlation

Description

Very similar to GraphQL query-to-feature correlation, we want to correlate an urgency level (see relevant code).

I think we'll also want a query_urgency here, and then add that as a property to Operation next to the feature category.

Then we'll also have to write some documentation on how folks can set the urgency and feature category, would you mind creating the issue for the urgency as well please?
