Add additional architectures into Praefect

Problem to solve

The existing architecture diagram on the Praefect docs shows a hybrid state that would exist when a customer would be moving from a single node Gitaly architecture to a HA architecture. We should clarify by providing two other architectures, one that shows current state, one that shows future state and then make it more clear that the diagram currently in the doc is a migration state.
