Docs feedback: How to set the environment setting in config.toml for Powershell?

The environment variable in config.toml needs more examples for windows powershell, for example how to extend the $env:path variable.

The current examples are not applicable for powershell and we're getting all sorts of weird error messages. I could also not find any tests testing that variable.
