Review all variables used in SAST orchestrators

With !16487 (merged), we can run SAST without using Docker-in-Docker. However, we need to do a full review of all variables used in the orchestrators.

Expected outputs:

  1. Documentation updates which describe the combinations of supported & unsupported environment variable & configuration options
