Elasticsearch: Document sharding constraints and characteristics for large instances

While indexing GitLab.com, the fact that were were using document routing came as a surprise to @victorcete and required him to reconsider the shard configuration. We should include notes on this (advice still to be determined) so it doesn't take administrators by surprise.
