Recommend Gitaly to not be on NFS for HA

We should update our HA documentation and diagrams to recommend storing git repos on their on local disks, instead of NFS.

This is based on learnings that we have had over time, that unless customers have a real NFS appliance, NFS less reliable/performant than a local disk with gitaly.

We should update the hybrid and fully distributed models:

1. Update the diagram to specifically note gitaly gets its own server and local disks for git
2. Update the text to better call this out

Should we also update horizontal model as well?
