Finish re-naming Instance Statistics as Usage Trends in the code

Problem to solve

We re-named the "Instance Statistics" feature as "Usage Trends" under #285220 (closed), however only in the UI and not the code. The code is out of sync with the UI.

Proposal

Update the code and docs to replace the "instance statistics" name with "usage trends".
