How to upgrade from 7.x

There seems to be no documentation on how to upgrade 7.x to either the latest 7.x or to a newer version. I am running the omnibus version 7.10.1 on Ubuntu. The only instructions I can find are:

sudo apt-get update
sudo apt-get install gitlab-ce

This is clearly incorrect because the output I get is:

ubuntu@gitlab:~$ sudo apt-get install gitlab-ce
Reading package lists... Done
Building dependency tree       
Reading state information... Done
gitlab-ce is already the newest version.
0 upgraded, 0 newly installed, 0 to remove and 250 not upgraded.

There are definitely newer versions of 7.x not to mention newer major releases. I cannot find any documentation on how to upgrade to anything newer
