Docker zero downtime updates

Problem to solve

Currently, there seems to be no instructions for zero-downtime updates for those running GitLab on Docker. I think a zero downtime update should be possible for at least HA GitLab setups running on Docker. I don't think it will work for a single-node or active/passive failover setups.

Proposal

GitLab should research zero-downtime updates for Docker setups and document the proper way to accomplish this.

If we need to research support for this, then I'm happy to move this into a feature request rather than a Docs issue.
