Is Sunday the first day of the week or the last? According to international standard ISO 8601, Monday is the first day of the week. It is followed by Tuesday, Wednesday, Thursday, Friday, and Saturday. Sunday is the 7th and final day.

Changing the first day of the week is possible under User Settings / Preferences / Localization. This was implemented in gitlab-foss!22755 (merged)

There should be a way to make it the default for a project though, or to detect preferences based on the User's origin?

Oh thanks you for notifying me ! It works ! Detect preferences based on the User's origin for setting default value would be a better feature at my opinion. But I'm not sure it worth the effort. I'm closing the issue, as I'm a satisfied user.
