There's no direct link with the topic ("Specific settings for languages and package managers") and GEMNASIUM_DB_REMOTE_URL, there must be some mix up there.
Proposal
Fix the variable being used, and also why users would want to do that: "For every language and package manager, add the following to the variables section of .gitlab-ci.yml:". It doesn't explain what problem we can solve by doing so.
Who can address the issue
