Rename GitLab Pseudonymizer to something more discoverable

We got feedback that many larger organizations are looking to be able to mine GitLab data to drive a variety of different objectives, effectiveness of Teams, of GitLab, and more.

While an OOTB solution would be great, they also expressed a need to do custom reporting. An expressed desire was to be able to export data out of GitLab into a data warehouse. Unfortunately no one was aware of the pseudonymizer.

We should try to rename this product, to more clearly convey its purpose as a method of getting GitLab DB data safely into a data warehouse.
