"platform" parameter for docker images is ignored when running multiple platforms of the same image
## Summary
<!--
Briefly summarize the bug
-->
When using multiple jobs with the same image name but with different "platform" values, it seems that the image hash gets re-used so every job uses the same platform. "pull_policy: always" doesn't change this. This problem only happens if the jobs are run on the same runner, e.g. this kind of caching of the image hash doesn't happen if the jobs are run on different runners.
## Steps to reproduce
<!--
What do you need to do to reproduce the bug? Please include job definitions or git repository structure if relevant
-->
Just build a pipeline with two jobs with different platform options like the one below. They have to run on the same runner.
<!--
Please add the definition of the job from `.gitlab-ci.yml` that is failing
inside of the code blocks (```) below.
-->
<details>
<summary> .gitlab-ci.yml </summary>
```yml
x86:
image:
name: ubuntu:24.04
docker:
platform: amd64
script:
- uname -a
arm:
image:
name: ubuntu:24.04
docker:
platform: arm64
script:
- uname -a
```
</details>
## Actual behavior
<!--
What actually happens
-->
Both "uname -a" commands return the same machine value, eg. "x86_64".
## Expected behavior
<!--
What you should see instead
-->
One job should return "x86_64" and the second one should return "aarch64" as the machine type.
## Relevant logs and/or screenshots
<!--
Paste the job logs inside of the code blocks (```) below so it would be
easier to read.
-->
