Rename snowplow_collector_uri to snowplow_collector_hostname

What does this MR do?

This changes Snowplow's snowplow_collector_uri setting to snowplow_collector_hostname, because it better covers it's meaning: Snowplow does not expect a URI, but a Hostname.
