Fix elasticsearch indexing in some contexts

What does this MR do?

Certain services include ::Elasticsearch::Model::Client::ClassMethods in an attempt to use the client method. However, doing so seems to bypass some important setup, leading to the correct elasticsearch URL not being used.

This goes unnoticed on dev installations because the default (localhost:9200) is sane. However, I noticed this going wrong for at least staging.gitlab.com
