Fix linebreak rendering in Mermaid flowcharts

What does this MR do?

Fixes #54588 (closed), mostly.

When inserting a line break in a Mermaid chart using <br />, it would be rendered verbatim instead of inserting a linebreak. For whatever reason, Mermaid recognizes <br> and <br/> but not <br />. This MR transforms all <br /> sequences in the text to <br> so that it's parsed properly.
