Need documentation on omnibus CE to EE upgrade process

My organization is about to upgrade to GitLab EE. We are currently running the latest CE omnibus installation. How do I go about the upgrade process, since gitlab-ee is its own package? Do I first uninstall CE? Do I run both? How does this process work?
