Upgrade to Git version v2.43.0
This issue raises from #4540 (comment 1669472570)
We would like to deploy git 2.43, so that our code can start reading from HEAD:.gitattributes
I'm not aware of any inherently risky changes in this release.
Steps

Optional: Create a change request in case the new Git version contains changes that may cause issues. -

Update the default Git version. This must happen after the default-disabled flag has been released to avoid issues with zero-downtime upgrades. -
Optional: Upgrade the minimum required Git version. This is only needed when we want to start using features that have been introduced with the new Git version. -
